Emily's Lemondrop Martini

Emily's Lemondrop Martini

A go to meal for every budget that is low carb and highly delicious. Meat/plant based meat is optional but highly recommended. 

Ingredients:

1) Meat/plant based crumbles about 1 lb. 

2) 2 bags of coleslaw mix, (may also use broccoli slaw)

3) Sauce (Terriyake, buffalo) to taste.

Optional toppings: blue cheese or feta cheese crumbles, raw pepitas or sunflower seeds.

Time: 10 minutes

This is seriously a bachelorette meal that is super fast and easy and my kids love. I usually brown the meat, we use ground turkey or ground deer most often. Once its brown in the same pan ad the 2 bags of mixed coleslaw veggies till wilted. This is where I separate the mixture in to 2 pans if I am using 2 different sauces. For the kids I add Teriyake sauce. For the adults however I usually add 1/4 -1/3 cup Frank A's buffalo sauce (very low calorie and carb), then add crumbled blue cheese and the raw pumpkin seeds right before serving. This is one of my go to meals that I make about once a week for a quick, healthy meal that the whole family can enjoy.

Emily's Lemondrop Martini

Need a simple way to get vitamin C to ward off the viruses this school year? The Lemon Martini is a mom favorite!


Ingredients: 

2 shots Triple Sec

1-2 shots Vodka (Titos is our fav)

2 tsp granulated sugar or 1-2 pumps simple syrup depending on your taste

Juice from 2 entire lemons

Sugar for the rim of the glass (optional)


Directions:

1) Rub the fresh cut lemon around the rim of the glass you are using, and then gently press into some granulated sugar to gently coat the outer rim. 

2)  Squeeze the fresh lemon juice in a cocktail mixer, add simple syrup (or granulated sugar), triple sec and vodka

3) Shake for about 20-30 seconds and pour into glass with sugar rimmed. Makes 1 cocktail. 


A fun take on this drink is adding different flavored vodkas for a slight variety of flavors although nothing beats classic lemon!
